The story where it all began
The Toulouse goose is one of the oldest domesticated goose breeds, with a history dating back to at least the 1400s in the region of Toulouse in south-western France. It was developed from the wild Greylag goose (Anser anser) and was prized for its large size, meat and ability to produce foie gras. The breed became known in England by reputation as early as 1810, but the first recorded importation was by the Earl of Derby around 1840. British breeders selected for even greater size, and by 1894 a gander weighing over 15 kg won a prize at the National Poultry Show. The breed was included in the American Poultry Association's Standard of Perfection in 1874. Over time, two distinct types emerged: the heavier Dewlap type (à bavette) bred for exhibition and foie gras, and the lighter Production type (sans bavette) kept as a general-purpose farm bird. Today, Toulouse geese are kept worldwide as pets, for meat, eggs and exhibition.125
